Sandwich and Deli Platters: Our chefs will prepare your sandwich spread on trays or in baskets and they include two sides and a tray of sandwich toppings so your guests can dress their gourmet deli sandwich just they way they like it. Our gourmet sandwiches feature an assortment of fresh breads and artisan breads and your choice of three delicious sandwich choices. If you want a really impressive meal, our Deli spread includes your choice of four meats (Smoked Turkey, Dearborn Pit Ham, Tuna Salad with Celery, Genoa Salami, Fresh Roast Top Sirloin crusted with our famous 7-herb spice blend or tasty Chicken salad.)

Soups & Leafy Lunches: Freshly made tasty soups delivered hot and some really great salads make a summer lunch a real hit in the office. Try a Candied Pecan Chicken Salad or the ever-popular BLT Salad with a sassy bacon-ranch dressing. Looking for a healthy alternative? The Lite & Fit Salad is wonderful with chicken and even healthier with a fresh grilled Salmon filet. We prepare over a dozen different leafy salads, each made with fresh crisp greens and some of the most flavorful topping combinations around.

Three ways to order your salad lunches. Individual boxed salad includes an entrée-size salad with roll, butter and cookie. Try our popular Salad Platters (serves 10) with artisan breads, butter and dressing to add on to your deli spread or hot meal. A variety of Salads may also be ordered, by the serving (min 30).

Boxed Meals: Our boxed meal variety is impressive in taste and quality. Boxed meals for a few or thousands, we have the variety and culinary style for award winning box lunches.

Carlson Catering Company is known in the Detroit area for having really great box lunches! Our boxes are built custom, just for you. We prepare seven different tasty wrap sandwiches, three classic deli sandwiches, four classic sub sandwiches and nine different gourmet sandwiches. There are so many choices, each of them mouth-watering good.

Executive Basket Lunches: Prepared by our Gourmet chefs, each lunch features two freshly made house salads, imported cheese and fruit nibbler, slice of cheesecake or chocolate tasting. The sandwiches are plated on glass and a linen-like napkin and eating utensils are provided. Tasty creations include an Aged Tenderloin with Fontina and wild mushrooms on toasted ciabatta or Champagne Marinated Grilled Chicken Breast with roasted sweet red peppers, grilled portabella mushroom and melted Boursin cheese with baby greens. For a really wonderful experience, order a jumbo shrimp cocktail for each guest. These are some of Michigan’s best sandwiches!

Theme Buffets: This season Detroit and Ann Arbor can enjoy seven very different, tasty and fun theme buffets at the office. Each menu includes a table cover to match the theme and some unique décor for the buffet table. Need a unique celebration, try a theme party like Hawaiian Luau, Fiesta Latino, Mama Mia Italian, Mediterranean Feast, Carribbean Spice, Pan Asian or Santa Fe Trail.

Carlson’s Favorites: Prepared by our bon vivant chefs with love, these are some of our favorites dishes. An interesting story, Chef Eric was awarded first place for his Chicken Venezi soup. It was so tasty. Everyone loved it. From it, he created a sauce that could carry off a luncheon or dinner entrée and Chicken Firenza was born. It’s one of our customer’s favorites. You will find Chicken Firenza and many other customer and chef favorites on this menu.

Luncheons on a Budget: Detroit’s economy keeps everyone adhering to budgets, so we created Luncheons on a Budget. Our chef’s have created 40 different entrees so you can order from the menu over and over again. Our executive chef oversees a crew of budding chefs, who work hard to create fantastic lunches from these menus.

Our Double Fudge Brownies are, well, if our sales staff have called on your personally, you know all about those brownies.
